Zucchini cakes

A good snack:


2 zucchini (or in my case I just had 1 large organic zucchini in the fridge)
2-3 green onions
1 egg
1/4 cup almond flour
Tbsp of minced garlic
Pinch of salt and pepper

1. Grate the zucchini. I suggest letting it sit in bowl for 10 mins because it gets real watery. OR you try to squeeze out the water from the graded zucchini.

2. Once u get as much water out of the bowl, add chopped green onions, egg, garlic, almond flour, salt and pepper. Mix well.

3. Heat coconut oil in a pan on the stove. Meanwhile make your zucchini mixture into little hand cakes and cook about 3-5 mins a side in the coconut oil.
